Remove the coffee from the heat when it begins to froth, pour a little of the froth into each cup, and return to the heat. Allow the coffee to rise again, but without bringing it to a boil, and then serve.
Avoid stirring the coffee after it has been served to avoid disturbing the sediment and giving the beverage a gritty flavour. Each cup should be frothy and aromatically delicious. Turkish Coffee is traditionally served with a glass of water. The water prepares the mouth for the flavour of the coffee. When serving a large group, semi-sweet Turkish coffee is best.
